Abul Kalam
"Tiiffin Proprietor"
Virtually born
in an Indian restaurant, father being an Indian cafe proprietor in the 60s
in the commercial Road (The Nisshan). I grew up in an Indian restaurant at a
very early age, watching various chefs learning different styles of cooking from
the Indian subcontinent. I became a chef/manager by trade. (KalamRestaurant,
Wood Street, Walthamstow). Left the trade for a decade and went into running social
clubs and then came back to what I was good at in 90s. In 1992 I then decided to
open up Tiffin Restaurant, then became very successful. Tiffin has won many
curry chef of the year awards and prepared three national finalists, which were Faruk
Miah, Dinar Ahmed and Aaman Uddin. Tiffin has appeared in most best national
food guides, working in with the motto "Freshness is goodness", achieving high
standards. Also operated a dial a Tiffin service for the local and city
workforce.
Dinar Ahmed & "Curry Chef of the year"
Dinar Ahmed originated from Bangladesh and grew
up in the main town of Sylhet. Dinar was brought to this country with his wife
and in seek of employment, he then decided to get involved into the restaurant
trade which he thought was the ideal job for him and he enjoyed it. Like all
other employees Dinar had to work hard and started off from scratch and had to
prove that he was doing the job properly, when the rotation period had come near
by, others like Dinar had to learn all the necessary facts and techniques that
the next job description had in stake. Year after year Dinar moved from one
position to another and then finally reached what he had been working for, which
was the position of the chef. Dinar has won curry chef of the year 1995/6 and
also has always reached the final, which is to prove he is amongst a top few
chefs in the country. Unlike other employees our chef has been working for us
ever since the opening of Tiffin restaurant and he is a valuable token to us all
and we hope he will stay employed at Tiffin for many other years to come. (We
all call him Mr Hashim, as he regards himself as Mr Tiffin)

Fakhor Uddin (Musa) & "Exotic Chef"
Musa is our
exotic chef and also originates from
Bangladesh from a village in Sylhet called Baghirghat, Gulabjonj. He came to the
United Kingdom in 1998. After he had come from Bangladesh he was employed at the
Tiffin restaurant as a part time worker. Musa had to gain his position from
bottom level in Bangladesh where he worked as a "Babursee" (which in Bengali
means chef) Musa worked in many Islamic institutions and catering for the hungry
Islamic scholars, which gave him skills to cook various exotic village dishes.
He was then endorsed to a higher position and also designed an exotic menu for
the Tiffin. While at Tiffin restaurant Musa
had gained many new techniques and had also reached the main position, which was
being an exotic chef. Our motto now having a chef like Musa, we can proudly say
that "you ain't had a curry, until you've tried a Tiffin". Musa has thrived on
freshness is goodness.
All our
employees are valuable to us and Tiffin Restaurant had
reached its status by working as a team.
